I would like to go ahead and say this incredible Gluten-Free Berry Crisp Recipe should disguise itself as a breakfast casserole.  How yummy would it be to get up and have this delicious berry crisp for breakfast with a hot cup of coffee with fresh cream.

My sister-in-law brought this to the last gathering we had and I licked the pan clean.  My husband had to leave early and I told him I would bring him some home…but we all ate it all before I could save him a piece.  whoops.  I owe him one.

Ingredients

Berries, 2 pints (whatever type you prefer, I chose blackberries and
raspberries)
1/8 C granulated sugar
1/4 C gluten-free flour

Crisp Topping
1 C gluten-free oats
1 C gluten-free quick cooking oats (or ground up oats)
3/4 C packed brown sugar
1/4 C gluten-free flour
1/2 C cold butter cut into thin slices
1 teaspoon cinnamon

Directions:

Preheat oven to 350.
Generously coat 8×8″ baking dish with butter.

Berries:
Mix sugar and flour in small dish.
Rinse berries and gently pat them dry, transfer to medium bowl.
Toss berries with flour mixture until nicely coated and pour into
bottom of baking dish.

Crisp Topping:
Mix oats, brown sugar, flour and cinnamon together in medium bowl.
Add thin slices of butter, pulling them apart with your fingers and
using your hands to knead it into the flour mixture.
Continue adding and blending butter piece by piece until the mixture
has formed into a nice crumble.
Drizzle the crumble over the berries until its completely covered.
Bake for 30 minutes.
(If the top needs a bit more browning put it under the broiler. Watch it closely so as not to burn!!)
