My husband made these easy gluten free peanut butter oat cookies the other weekend and I wanted to share their goodness with you. And an obvious hint, they go great with coffee!
3/4 cup sugar
3/4 brown sugar
1/4 cup butter
1 tsp vanilla
1 3/4 tsp baking soda
3 cups rolled oats
1 cup peanut butter
6oz chocolate chips
Preheat oven to 350 degrees
Combine sugar, brown sugar and butter in a large bowl and beat until creamy.
Add eggs, vanilla and baking soda and mix well.
Add peanut butter and mix.
Stir in oats and chocolate chips.
Place teaspoon full of dough on a lightly greased cookie sheet about 2 inches apart.
Bake 10-12 minutes until lightly browned a long the edges.
