Reader Guest Post: Cucumber Fruit Salad

I love this cucumber salad because there is the sweetness of the fruit with the added green and seriousness of the cucumber. It’s like the cucumber grows the fruit salad up and makes it a bit more complex.

Ingredients:
1 cantaloupe
1 watermelon (small seedless)
1 lb. strawberries
6 cocktail cucumbers
1/2 lbs blueberries

Directions:
Cut all fruit into bite size pieces except the blueberries. Toss the fruit together then mix in the blueberries.

**A little crumble of feta cheese would make this great for a happy hour spread.

This salad also pairs well with a Cabernet wine spritzer which you can make by combining 1 part Cabernet to 1 part favorite sparkling water, add ice and sip!
