how to make a quinoa fruit salad

This Quinoa Fruit Salad is high protein and a recipe of my own. It makes enough for about 6 side salads or 4 main dish meals.

As a main dish, it has 406 calories, 8 grams fiber and 11 grams of protein – no cholesterol, is vegan (unless made with honey) and gluten-free. It also only has 144 mg of sodium.

As a side dish, it has 271 calories, 5 grams fiber, 7 grams protein and only 96 grams sodium.

Ingredients:

1 cup dry quinoa

1 pint strawberries, sliced (2.5-3 cups)

16 oz. fresh blueberries (1.5-2 cups)

1 cup apple, coarsely chopped

2 tbsp Agave syrup (Honey also works)

1 tsp white wine vinegar

1 tbsp fresh lime juice

Pinch of sea salt

1/2 cup pine nuts

Directions:
1. Prepare quinoa according to package directions.

2. Prepare fruit and place in large bowl

3. Combine syrup, vinegar, lime juice and salt in a small bowl.

4. Fluff quinoa with a fork and add it and pine nuts to fruit. Combine. Pour on dressing and mix well. Chill till ready to serve.
