I know many of you are still surrounded in snow, but here in Arizona spring is in full swing. You will be there soon! I promise it’s worth the wait. Lemonade seems to be the perfect spring and summer treat. It’s sweet, tart and refreshing. My favorite is strawberry lemonade, but just thinking about the amount of sugar in it kind of makes me sick. Honey and I have had a love affair for a long time, so my brain kind of exploded when I thought about using it as a sugar substitute in my lemonade. The end result is so yummy, and I hope you enjoy it as much as I do!
1 pound of strawberries
3/4 cup of honey
1 – 1 1/2 cups of fresh lemon juice (depending on how tart you like it)
4 cups of water
Squeeze lemons until you have 1 – 1 1/2 cups
Quarter one pound of strawberries and put in blender
Pour honey into blender
Blend strawberries and honey until liquid forms
Add lemon juice to blender and blend one more time
Pour in 4 cups of water and mix well
Pour the lemonade into your favorite pitcher. Hopefully it’s clear, this is the prettiest shade of pink!
This Strawberry Honey Lemonade is best served fresh. Pour over ice and enjoy!
